One of my favorite places to eat with my girl, Rachel, when we are at “the mall” is Nordstrom’s Café. They have amazing salad, sandwiches, and desserts! We don’t go very often because it is 45 minutes away, and oh, have I mentioned before that I dislike driving? So there it is, I confess it.
Anyway, the point is that Nordstrom’s Café has these amazing Lemon Ricotta Cookies that are to die for. So I bought their cookbook and tried to reproduce them, but I ended up changing them quite a bit (because I literally have no ability to stick with a recipe without changing it). I spent the better part of an afternoon perfecting the dough, the “ball” and baking procedure, one or two cookies at a time! But I think you’ll agree when you try them, it was worth it! Did I hear magically delicious?
So these are St. Patrick’s Day Lemon Cookies, unless of course, you leave out the green food coloring, than they are just “Really Delicious Lemon Cookies.” :) These make a great lemon-flavored Spring treat for your neighbors, who will be “lucky” to have you as a neighbor if you make them some!
